Handmade Small Batch Craft Gin in the CBD

With three multi award-winning gins under their belt and the CBD’s first spirit tasting room with a still to follow, the boys behind this local business show no signs of slowing down.


 Adam Carpenter and Wes Heddles started Prohibition Liquor Co. with a dream much like the name suggests; to give the people what they want! Inspired by the prohibition era, the two ‘bootleggers’ produced their first batch of gin in 2015. 

 Now, after garnering many accolades for their signature Original and Bathtub Cut gins and a newly released Shiraz Barrel Aged gin, the pair have opened the Gilbert Street tasting room, complete with gin flights, food offerings, functions and plans to start distilling special releases in the venue later this year. We sat down with Adam to talk all things Prohibition.

 Tell us a bit more about your tasting room. 

We are a city-based cellar door for spirits, the only one of its kind – so we are more than just a bar! From Friday nights being a busy, bustling after-work venue to the relaxed Sunday afternoon cellar door vibe complete with live music, pop up exhibitions and food trucks, the atmosphere is always interesting and dynamic. We also support the other SA distilleries and act as a local craft spirits tasting room, so you can try up to 60 different craft gins from across SA, Australia and selected international products.

 How does it feel to be the first distillery door in the Adelaide CBD? 

It is amazing to start our facility right here in the heart of the CBD. The south-west corner of the city is fast becoming a vibrant destination and we feel a strong connection with the local community and other venues in the area. The feedback from visitors and regular customers is overwhelmingly positive and the vibe on a Friday night particularly is electric!

 You’ve won many awards for your gins. What sets Prohibition aside from other distillers? 

We designed all of our spirits to drink neat, as a dry martini or just over ice, so there is nowhere to hide with spirit quality, it has to be top notch – but it also makes them easier to drink when mixed!

 Where do you see the future of Prohibition Liquor Co. in the next few years? 

We are working on a range of export markets and substantial growth across our national distribution network, but the fun part is the growth and continued activation of our Gilbert Street Distillery. We have a still coming soon to start production from within the city, plus more masterclasses and gin blending classes starting soon. 

 Joining forces with popular Kent Town café Tell Henry, the tasting room brews up barista made coffees and tasty treats from the roasters in the mornings before transforming into a gin lover’s paradise in the evening. Gin not your drink of choice? The venue also caters to the wine and craft beer lover, pouring local drops and pints from winemakers and brewers across the state.
