Local seasonal produce is on show this autumn at The Highway Hotel.
Words Tom Cumming
The Highway has embraced local seasonal South Australian produce and the result is an impressive new autumn menu that puts a modern twist on some classic dishes. The Highway’s head chef, Damien Fong Lim, says the menus are rotated twice a year to reflect these seasonal ingredients. “This particular menu has a focus on old school, minimalistic cooking techniques with food designed to be hearty to keep you cozy for winter”.
Damien has managed to creatively inject flair into a selection of winter favourites. Diners can still get a schnitzel parmigiana and their seafood staples, but the real stars of the autumn menu scream originality. Beetroot and vodka salmon gravlax, rabbit fricassee, Spencer Gulf prawn spaghettini and slow cooked lamb ribs are among the showstoppers. Folks can also choose from a range of gourmet pizzas and even sample a vegan burger.
So, try something different or indulge in some mouth-watering comfort food at The Highway Hotel. This menu is one you won’t want to miss out on.
